Recipe: Simple Gluten Free Salted Caramel Brownies

Jane Austen should have wrote, "It is a truth universally acknowledged that everyone is in need of some good brownies."

It seems like most people have a favourite type of brownie: Fudge Brownies, Cake Brownies or Chewy Brownies. Me? I don't discriminate, I eat all types of brownies, including these delightfully naughty and very easy to make Gluten Free Salted Caramel Brownies.

I don't suffer from a gluten allergy nor do I have a gluten free diet, however, family members are coelics and so, I want them to enjoy cakes, brownies and all types of goodies too!

These brownies are gooey and decadent. The salted caramel oozes into the brownies and gives them a beautiful richness that has a little salt kick to them.

Surprise your friends with these little gluten free goodies, I promise you, no one will know the difference!

This recipe has been adapted from Rachel Cook's Caramel Kissed Brownies.

For 12 of these little bites of goodness, you'll need:
  • 113g Unsalted Butter (I use Stork)
  • 180g Soft Brown Sugar
  • 2 eggs
  • 2 tsp Vanilla Extract
  • 90g Gluten Free Plain Flour (I use Asda's Free From Plain Flour)
  • 1/2 tsp Gluten Free Baking Powder
  • 60g Unsweetened Cocoa Powder
  • 1/2 tsp Salt
  • 4 tbsp Salted Caramel Sauce (Homemade or shop bought, I won't tell!)
Preheat your oven 180C and grease a 20cm (8inch) square cake tin with a spray oil and line with baking parchment.
To start, take the butter and sugar and cream until soft and light in colour.

Crack the two eggs into the butter and sugar one at a time and whisk until the mixture is smooth.

Take a spatula and scrape the sides of the bowl and then stir in the vanilla extract.

Sift in the cocoa powder and stir through the mixture, gently.

Sift in the flour, baking powder and salt and mix until just combined.

Take a look at that mixture, feel free to test it you know to make sure it isn't poisoned.

Pour about half the mixture into the tin and leave the rest to the side and put in the oven for ten minutes. Take this time to lick the bowl clean clean up.

Take the pan out of the oven and pour the caramel on the brownies, and spread over the surface.

Just look at that beautiful layer of caramel, if you're drooling, that's okay... I'm there with you.

Cover the brownies with the rest of the mixture and put in the oven for 30-35 minutes or until a skewer comes out mostly clean.

Remove from the oven and leave on the side to cool. Seriously, resist the urge, I know it will be difficult because the scent of these brownies is incredible.

When the brownies have cooled, remove from the pan and cut up into 12 little bite size brownies or you can create larger chunks.

A naughty little treat that will definitely cause a lot of cooing and eye rolling.
